Timmy made it at a library cooking class with a teacher
from a local catering establishment/cooking school, Chef Rob.
And surprisingly, I can NOT find one reference online to Chef Rob,
other than a
class he gave about a year ago at a different library about 40 miles from my home!
Wish I could find a FB page or something to include here to at least credit him for this!
Well, here goes....
an easy, yummy and pleasing - to - the - eye
summery dessert
for "just the family" or for company~~
~Berried Treasure~
A
Chocolate Coated Ice Cream Cone
Bursting
with Fresh Berries
with Fresh Berries
Ingredients~
½ C sugar
4 oz semi sweet choclate
6 large waffle cones
3 C berries ( or a mix of fresh berries) Timmy used
blueberries, raspberries and blackberries
Mint sprigs for garnish
1.
Heat chocolate in small saucepan over medium low
heat. Stir until smooth
2. Brush inside of cones with chocolate. The dip edges in sugar.
3. Stand cones upright in small glasses and refrigerate until set ( about 15 minutes)
4. Combine berries in bowl.
5. Spoon berries into cones and drizzle with raspberry coulis (simply 2 C raspberries mixed with 2 T sugar, which can be refrigerated for up to one week after making.)
6. Lay cones on plate and garnish with mint sprigs.
